CEAA/CAAL Night: Cave tour and tasting at Murray's Cheese

SEAS graduates are invited to tour the private underground cheese-curing caves at Murray's Cheese Shop (New York's oldest) with an affineur (or cheese ager), who cares for hundreds of cheese wheels, turning and washing them regularly to distribute the butterfat and improve flavor while they ripen. After the tour, SEAS grads are invited to a networking reception with wine and Murray's cheese. Murray's Cheese Caves are climate-controlled walk-in refrigerators designed by France's leading affineur, Hervé Mons. The Caves are one of New York's best-kept secrets: Conde Nast Traveler listed Murray's Cheese Caves as one of fifty places on their "Dream List: Experiences Only an Insider Can Deliver," and New York Daily News named the Caves one of "New York's 10 Coolest Spots."
